Switch from Office 365 to Local Exchange Server

Hello,

In the even that we wish to switch (revert) from Office 365 back to a Local Exchange 2010 installation, what is the procedure? Specifically, I've heard there are issues that even when the DNS pointers are changed, some e-mail continues to look for the Microsoft online server.
